02/23/2012 - Baked Italian Pork Parmesan! 
Pork Loin steaks breaded with fresh whole grain bread crumbs with eggplant cubed in the same dish...fresh marinara poured over it all topping it off with fresh parm.
Served over brown rice. Also have fresh green beans in the steamer insert.

Low fat, low salt, low calories!

Fresh Marinara is easy to make! Start with a basic tomato based puree.

Take 4 fresh tomato's quartered, half a bell pepper, about 2 teaspoons of fresh minced garlic, onion, mushrooms and 2 celery stalks and process them in a blender, bullet, ninja or food processor until pureed. 
For this particular dish I added some dried Italian blended herbs.

You can use this in spaghetti sauces, other italian dishes. You can also use mexican spices and herbs instead of the italian blend for south of the border dishes or if you make it without seasoning and add in 1 tsp of either lemon juice or lime juice you will have a fresh pureed salsa to use on omelets in the morning or just to eat with chips! 

02/22/2012 -  El Grande soft tacos!

Low fat ground beef browned and rinsed with fresh sauteed garlic, onion, mushrooms, green pepper. Chili pepper and cumin to season, wrapped in a low fat softwrap with tomato and romaine lettuce.

We have discovered Smart & Delicious ™ Tortillas and Smart & Delicious SoftWraps ™ . Available at the bigger HEB's in the deli section they allow you to have tortillas and sandwich wraps at half or less the calories. They come in a variety of flavors and are very good.

HEB, Mission, other tortillas can be up to 200 calories each just for the tortilla. The Smart and Delicious brand tortillas are just 50 calories each. Their huge wraps are just 100 calories each, much less than 2 slices of bread for your sandwich.

They cost a bit more but they are worth it! Try them out....I think you'll like them....!

02/15/2012 - Oven "fried" chicken breast
 
....sauteed fresh spinach and mushrooms and fresh steamed green beans....


To make it, Marinade chicken breasts in buttermilk and dijon mustard for about a
hour then breaded them in whole wheat flour, spritzed with non stick
spray and baked it on the broiler pan for about an hour at 350!



02/13/2012 - Whole grain herb Crusted Salmon fillets and sauteed cabbage.


Fresh Salmon marinated in lemon juice dredged in a whole grain fresh
bread crumb seasoned with sage, garlic powder, thyme and peppercorns,
then baked until it flakes and the bread crumbs are a toasty golden
brown.

Cabbage is just a simple sauteed cabbage slaw with onion and garlic.
How to make fresh bread crumbs.

We've all had the bread leftovers, those first one or two pieces and
the heels in a bag. Usually it is our reminder to buy bread and some
people throw those last few pieces away.

If you're smart, you'll save them to use in all sorts of ways.

I use them for fresh bread crumbs.
Simply lay your "leftover"
bread on the rack in your oven @350 with the door open for 20-30 minutes
to dry it out. It's a mindless task....in fact I usually start them
then go change into comfortable clothes and wash a few dishes and even d
o some prep work before they are complete.

Once they are quite dry and crispy I break them up and process them in my ninja chopper. You can also use your food processor.

I add herbs to the bread crumbs and process a little more. You can then
use them to dredge meats before you bake them, add to the top of a
casserole, line the bottom of a pie pan or 13x9 for dinner quiche type
dishes....they have endless possibilities. 


02/12/2012 - Italian tomato basil vegetable soup made of course with fresh ingredients....sorta... 
Started with lean ground beef, browned and drained then added garlic,
fresh tomatoes chopped in large pieces, celery, turnips, zucchini and a
potato cubed...I did add 2 cans of tomato soup which increased the
sodium count but not out of site...and made it thick and rich...

I also threw in some whole grain spaghetti that was cooked and in the fridge...

Topped with fresh grated Parma and chopped avocados..

I was pleasantly surprised at how well the turnips tasted..i love them
anyway ....they paired wonderfully with the tomato basil stock...
